It comes down to fit and fabric. Quest is the do-everything everyday jersey with a comfortable fit and reliable breathability; Attack steps up to a closer, faster cut with lighter fabrics for hard training and racing; PRO is the most aero and feature-rich, with premium materials for riders chasing every advantage. All three share quick-dry fabrics and rear storage.
Short-sleeve jerseys are the default for warm and hot riding, while long-sleeve and thermal versions add coverage for cool mornings, sun, and shoulder-season miles. Many riders own both and let the forecast decide; in between, a short-sleeve jersey plus arm warmers covers a wide range.
A base layer isn't required, but it noticeably improves comfort by moving sweat off your skin, which keeps you cooler in heat and warmer in the cold. Pair a breathable base layer with your jersey to round out the system.
